Photo Recap

Remember that time when I actually wrote frequent post in this little bog? Me neither. This month has been an absolute non-stop whirlwind, and it's not over yet! I have one more full work week and then I'm headed out to San Francisco for a week with my company for an event! Does life ever slow down? I sure hope the answer is yes.

You may be wondering what on earth I've we've been up to lately, or you may not care at all, but I'll share anyway. Few words, lots of pics. Sound good? Great!!

Simply Delicious Fish Taco Recipe

In honor of beach week, I thought I'd share a fun, summer recipe. We had these at the beach a few weeks ago, and they were DE-LISH. Simple, fresh ingredients and a definite crowd-pleaser!

Fish Taco Recipe

Ingredients
1lb. tilapia filets
4-6 flour tortillas
Shredded lettuce (we mixed iceberg and romaine)
Chopped avacado (we used 4 large ones)
Salsa (any type)
Sour Cream
Shredded Mexican blend cheese

Marinade
1/4 cup EVOO
3Tbsp. lime juice
1 1/2 tsp. honey
1/2 tsp. garlic powder
1 Tbsp. taco seasoning
1/2 tsp. hot sauce

Combine marinade ingredients in small bowl and mix well. Pour marinade over tilapia in shallow baking dish or large ziplock bag. Refrigerate for 1 hour (the longer the better).

Carefully place filets on oiled cooking grate and grill for 3 minutes on each side until they are just cooked through. About one minute before filets are done, place tortillas on the grill to warm; flip tortillas once. Keep tortillas on a warm plate if desired. Top tortilla with filet and garnish with lettuce, avacado, salsa, sour cream and cheese as desired.

Beach Week 2011

Now, before you start thinking that I'm referring to those high school and college glory days, you should know that in the M Family, we lovingly refer to our annual family (B's side) beach trip as "Beach Week." We head down to OCMD and spend the week (if we're lucky enough to get all of those days off of work) laying in the sun, sipping on cocktails and catching up with family. 

This will be my fifth summer traveling with the family for this annual trip, and I cannot help but think about how much has changed since my first year. Back then, we'd only been dating for a few short months, and none of B's brothers were married. Now? His older brother is married and has a one year old son (you might know them from ILYMTC?!), we're married and his youngest brother is getting married in a few months! 

The best part? Both of my SILs have been there from the beginning. From that first beach week up until now, our relationships have grown and we've been through a lot! Marrying into large and close knit family is not always easy. But, it's definitely easier with these ladies by my side for the journey. 

This year will be a little different. Our in-laws now own a place at the beach, but it's not large enough to house all nine of us (plus three dogs?) yet. Next summer, we'll all be together again, but this year I'll be making new memories, and spending time remembering the ones that got us here. Here's a few fun pics from our trips over the last few years ...
