Simply Delicious Fish Taco Recipe

In honor of beach week, I thought I'd share a fun, summer recipe. We had these at the beach a few weeks ago, and they were DE-LISH. Simple, fresh ingredients and a definite crowd-pleaser!

Fish Taco Recipe

Ingredients
1lb. tilapia filets
4-6 flour tortillas
Shredded lettuce (we mixed iceberg and romaine)
Chopped avacado (we used 4 large ones)
Salsa (any type)
Sour Cream
Shredded Mexican blend cheese

Marinade
1/4 cup EVOO
3Tbsp. lime juice
1 1/2 tsp. honey
1/2 tsp. garlic powder
1 Tbsp. taco seasoning
1/2 tsp. hot sauce

Combine marinade ingredients in small bowl and mix well. Pour marinade over tilapia in shallow baking dish or large ziplock bag. Refrigerate for 1 hour (the longer the better).

Carefully place filets on oiled cooking grate and grill for 3 minutes on each side until they are just cooked through. About one minute before filets are done, place tortillas on the grill to warm; flip tortillas once. Keep tortillas on a warm plate if desired. Top tortilla with filet and garnish with lettuce, avacado, salsa, sour cream and cheese as desired.

This is probably the first fish taco recipe we have seen that isn't fried. What healthy alternative! Not to mention, this sounds delicious as well. Thanks for sharing, Pamela!
